A simple switch of ingredients can turn fatty family favorites into healthy dishes. In baked goods, use applesauce or prune puree for half of the called-for butter, shortening or oil. If a recipe calls for 1 cup of shredded cheddar cheese, use 1/2 cup instead. When making casseroles, scale back on meat, poultry or fish and increase the amount of vegetables.
